2016 Watervale Shiraz 

Estate grown fruit, classic Watervale shiraz with lifted berry fruits of mulberry and plum skin.  

Showing dried wild aromatics of liquorice, bay leaf, fennel seed, cardamom, cinnamon with just a hint of menthol.  A lovely restrained framework, rich, plush mid palate with a long elegant finish. 

Basket pressed in small parcels then matured in a blend of new French oak barrique for 18 months. 

Best served decanted. With careful cellaring this wine should mature gracefully for 10+ years. 

· Delicious paired with a classic duck confit, white bean and smoky garlic sausage cassoulet.

2014 Hilltop Vineyard Shiraz
The 2014 Hilltop Vineyard Shiraz was sourced from estate
grown vines and a neighbouring block. The fruit for this
Shiraz has been handpicked and carefully selected to
ferment in small parcels.
Afer fermentation, these parcels have been matured for
18 months in a blend of older French and American oak
barriques and hogsheads. With lifed aromatics of plum
spice and fennel seed, this juicy Shiraz has finely textured
tannin and sof round mid weight structure.
Sealed with a screw cap to ensure integrity of product,
with careful cellaring this wine should mature gracefully
for five + years
Serve with spicy goat curry and saffron rice.
